
Vegetable Chilli Milli

Ingredients:
- 5-6 tomatoes (chopped)
- 1 cabbage (chopped)
- 1 capsicum (chopped)
- 3-4 beans (chopped)
- 3-4 dried red chillies
- 2 green chillies
- 1 cup cashew nuts
- 1 cardamom pod
- 1 cinnamon stick
- 1 tbsp red chilli powder
- 1 tbsp turmeric powder
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- 1 cup beaten yoghurt (curd)
- Salt to taste
- 5 tbsp oil
- 1 tbsp dried fenugreek leaves (kasuri methi)
Method:
- Heat 5 tbsp of oil in a pan. Add 1 cardamom pod and 1 cinnamon stick. Once they sizzle, toss in the chopped tomatoes and fry for about a minute.
- Next, add 3-4 dried red chillies and 1 cup of cashew nuts. Pour in 1 cup of water and let it cook on a medium flame for 3-4 minutes.
- Allow the mixture to cool, then transfer it to a grinder. Blend until you get a smooth paste.
- In another frying pan, heat 2 tbsp of oil. Add 2 green chillies, chopped cabbage, and capsicum. Sprinkle salt to taste and fry the vegetables on a medium flame for 2-3 minutes until tender.
- Once the vegetables are cooked, add the tomato and chilli paste. Mix well, cover with a lid, and let it simmer on a low flame for 4 minutes.
- Finally, stir in the beaten yoghurt and mix thoroughly.
- Garnish with dried fenugreek leaves (kasuri methi).
