
Spicy Chilli Egg

Hyderabad: Chilli Egg is a beloved Indo-Chinese appetiser that has won the hearts of many households. This dish is a perfect blend of spicy, tangy, and savoury flavours, making it a standout in the world of fusion cuisine. Ingredients:
- 3-4 hard-boiled eggs
- 2 medium-sized onions, julienned
- 3 medium-sized capsicums, julienned
- 2 finely chopped green chillies
- 3-4 garlic cloves, finely chopped
- 1-inch piece of ginger, finely chopped
- ½ tbsp chilli powder
- ½ tbsp coriander powder
- ½ tbsp soy sauce
- 1 cup tomato sauce
- 1 tbsp red chilli sauce
- 1 tbsp green chilli sauce
- ½ tbsp vinegar
- 1 cup cornflour mixed with water (for thickening)
- Salt to taste
- Sugar to taste
- 5 tbsp oil
- Fresh coriander leaves, finely chopped (for garnish)
Method:
- Heat a wok or large frying pan and add the oil. Allow it to heat up until it’s ready for cooking.
- Once the oil is hot, add the chopped garlic, ginger, and green chillies. Sauté until the garlic and ginger turn golden brown.
- Add the julienned onions and fry until they become golden brown. Season with salt to taste.
- Toss in the capsicum and mix well with the onions. Continue frying for 4-5 minutes on medium heat until the capsicum softens slightly.
- Add the chilli powder and coriander powder, stirring well to combine.
- Pour in the soy sauce and mix thoroughly.
- Next, add the tomato sauce, red chilli sauce, and green chilli sauce. Stir well and cook on a low flame for 2 minutes.
- Add the cornflour-water mixture to the wok. Stir continuously and cook on low heat for 3 minutes with the lid on to allow the gravy to thicken.
- In a separate frying pan, lightly coat the hard-boiled eggs in cornflour and fry them until golden.
- Once the eggs are fried, gently add them to the gravy mixture, ensuring they are well-coated.
- Garnish with freshly chopped coriander leaves and serve hot.
