Ingredients
1. 500 grams chicken (with bones)
2. 1 tablespoon ginger-garlic paste
3. 1 teaspoon garam masala
4. 1 tablespoon lime juice
5. 1 cup beaten curd (yoghurt)
6. 1 cup cornflour
7. 1 tablespoon chopped garlic
8. 3 to 4 chopped green chillies
9. 1 clove of ginger (julienned)
10. 1 tablespoon chopped coriander leaves
11. 3 to 4 tablespoons oil
12. Salt to taste
13 1 lime (thinly sliced)
14. Ground peppercorns (to taste)
Method
Step 1: Marination
- In a large bowl, add the chicken pieces.
- Mix in the ginger-garlic paste, ground peppercorns, garam masala, lime juice, and beaten curd.
- Ensure the chicken is well-coated with the marinade.
- Let it rest for 30 minutes to soak up all the flavours.
Step 2: Preparing the Gravy
- Heat 3 to 4 tablespoons of oil in a pan.
- Add the chopped garlic and green chillies, frying until golden brown.
- Add the marinated chicken pieces (reserve the leftover marinade for later) and fry until the chicken changes colour and the oil begins to separate.
- Pour in the remaining marinade and mix well. Cover the pan and let it cook on a medium flame for 5 minutes.
Pro tip: Avoid adding water—the curd will release enough moisture to cook the chicken.
Step 3: Thickening the Gravy
- In a small bowl, mix cornflour with water to create a smooth paste.
- Open the pan lid and add the cornflour paste to the chicken. Cook for 7 minutes, stirring occasionally.
- Sprinkle in an extra ½ teaspoon of cornflour for a thicker consistency.
- Toss in the julienned ginger, green chillies, and thinly sliced lime.
- Cover and cook for another 3 minutes.
Step 4: Garnish and Serve
Sprinkle freshly chopped coriander leaves over the dish.
